Copan is a relatively safe town, though certain precautions should be taken. It's not a good idea for women to walk unaccompanied late at night, and if you want to enjoy Copan's nightlife you're best having at least one male as part of your group.
Copan's proximity to the border with Guatemala has led to some narco-trafficking activity in the region, along with the violence that accompanies it, but this generally does not affect tourists. Violent crimes against travelers are rare. If you witness a dispute do not get involved under any circumstances, as things can escalate quickly.
