Restaurant La Chata - Restaurant Guadalajara - Mexico

At the downtown branch of La Chata, in the open kitchen at the entrance, a dozen or so women in white bonnets jockey for position. They cook, ladle, roll, pat and otherwise prepare vast quantities of soup, enchiladas and other traditional Mexican homey favorites. This is something to see as you wait in line for a crack at one of the specialties of La Chata (founded in 1942 by "La Chata," aka Carmen Castorena Vázquez). Especially popular is the Caldo Tlalpeño, a soup with chipotle-seasoned chicken, avocado, garbanzo beans, carrots, "chayote," cheese and white rice (59 pesos). The crowded dining room has about 30 tables.
