Renowned Boston chef Paul Hathaway has little to prove when it comes to whipping up culinary delights; he's been recognized by the gastronomic gurus ever since his days as head chef with Providence, Pomodoro, and Bok Choy. The assurance of his talent shows in his first solo project, Chez Albert in Amherst, Massachusetts, whose laid-back friendly waitstaff and unassuming yet classy French Bistro atmosphere are already legendary in this collegiate valley.
People don't come here to see and be seen; the limited number of tables and dark interior aren't set up for that. Rather, the guests flock here for the chance to experience true culinary ecstacy, each dish lovingly prepared by an expert hand, and with an expert's attention: the ever-changing menu always contains local, seasonally appropriate, and organic ingredients. His endless variations on succulent oxtail are devine, his fish simply and cleanly executed, and his vegetables lovingly tended. Don't forget to try the creamy, lime green split pea soup if you wander in during the early months of spring, and don't forget your wallet any season.
An experience like this is priceless, and pricey, but please don't skip any course or glass of wine. You deserve it.

I have been to Chez Albert at least a dozen times, and each time was a culinary delight. The food is *always* original and terrific, and the friendly, quirky waitstaff make you feel more than welcome. For the uninitiated, don't let the (comparatively) small sizes of the dishes fool you. You will be more than satisfied by the end of the meal, without having to stuff down a gigantic, yet uninteresting TGI Friday's portion.
