Tucked away in a Paris-esque alley in the upmarket neighborhood Recoleta, Republica is a fine example of the latter. Ring the doorbell and the friendly staff opens the door to a delicate and soothing ambiance paired with contemporary, French-inspired takes on traditional Argentine cuisine. Walking up the stairs, one is pulled into the warm, comfortable surroundings of a renovated late 19th-century building, decorated with sparse and elegant modern furniture, for a meal that should not be rushed. The staff was so friendly and helpful in choosing both wines and food. We go to Buenos Aires every July and look forward to the visit.
