This estancia, located in the suburbs of Jesús Maria, was the first to be built in 1616. The ancient ranch house and its fine gastronomical history have been maintained and as well as sampling the food delights visitors to the estancia can take in its agricultural past, ancient chapel and old mill and beautiful gardens. Numerous tours are available of the site.
The estancia has had a diverse history that can be found at the Provincial Museum Casa de Caroya. As well as its religious and agricultural purpose, the estancia was used to house students during vacations and after the expulsion of the Jesuits it became a key firearms factory during the Argentine War of Independence between 1814 and 1816. In 1854 the estancia became the property of the government and in 1876 it became a significant lodge for Italian immigrants. The influence of Italian immigrants of Friuli is abundantly evident through the local delicacies and in the local architecture. The Fiesta de las Comidas Tipicas Caroyenses provides an excellent opportunity to sample Caroya’s gastronomical treats.
