A unique version of hot chocolate in which the white floating pieces in your cup will not be marshmallows, but actually mozzarella or criollo cheese, chocolate Bogotano – or Santafereño – is a traditional delicacy enjoyed at breakfast or during a cold afternoon. Follow your nose to one of many chocolaterías in the city for a taste of this slow-cooked combination of milk, water, chocolate and cinnamon. The drink is usually served with toast and the pieces of cheese can come on the side or already in the drink. Though it may seem for some that cheese is not the best ingredient to add to a steaming cup of chocolate, this drink is very popular and often regarded as a great discovery among foreigners. If you find yourself a new fan of chocolate Bogotano, here is the recipe to enjoy after your trip:
1 chocolate tablet
½ cup of water
½ cup of milk
Cinnamon
4 pieces of diced mozzarella cheese
In a high pot pour in the water, milk and chocolate tablets and place onto medium heat. Stir to help dissolve the chocolate evenly, and once it has come to a boil move the pot from the fire. Beat the mix energetically, then place the pot back on the heat. Let it boil two more times, beating the mixture in between. Serve in a large cup, adding the cinnamon and the cheese.
