Beneath a centuries-old almond tree, you’ll find a market-like place. In today’s zephyr, the signs wave, whispering Donde Lola, Donde Maragrita, La Favorita, La Tía Gloria. I’ll warn you now, if you follow a vegetarian, kosher, halal or low-cholesterol diet, ignore the calls. What these women serve up is a traditional must-try for visitors to Girón: the fritanga, a plate heaping with sausages, rellena (stuffed pork loin) and other pork delicacies, with cheese-stuffed maduro and potatoes, all deep-fried and served hot with a toothpick to your white-tile table. You only need a soda or beer to wash it all down.
