La Cave serves as proof as to why Popayán was awarded the 2005 UNESCO World City of Gastronomy. I went to La Cave three times. The second and third times were two weeks following my initial visit, 'cause I wanted to have an accurate assessment of its homemade cheesecake, which I believed to be the best I’ve ever tasted. I’m happy to report that both body and mind have confirmed that La Cave’s cheesecake is in fact the most delicious and satisfying pie in the country and, perhaps, in South America. Aside from fresh baked goods, La Cave cooks up some fine pasta, crepes and other menu items. Neatly tucked into a quiet corner of the historical center of the city, your stomach will surely thank you for finding this Italian and French styled eatery.
