There is not much variety to speak of in Manizales. Most restaurants are fast food joints with typical fair like arepas, empanadas, and traditional plates with meat or fish. Anomalies are best found in the nicer hotels in the city, but you have to be willing to pay up to three times the price for a special dish. Manizales is still considered paisa country, so “bandeja paisa” (varieties of meat served with avocado, egg, beans, and grilled banana) would be worth a try if it’s on the menu. The “cazuela” (seafood or meat stew) is also very tasty in this part of the country.
