Uncle Ho's opened in Spring 2007, bringing Vietnamese food to Quito through this real gem of a restaurant. The owner is part-Vietnamese and unlike most of the Asian food in Quito, the food is very authentic. The restaurant combines delicately flavored, mouth-watering food with friendly service. For a real taste of Vietnam, slurp on the "Pho," which is a Hanoi-style beef noodle soup, or for that matter, try any of the menu items--from Summer Rolls to Coconut Curry Chicken, all bring a delicious taste of Vietnam to your palate. Finish up with a round of Stuffed Fried Bananas, flambéed at your table. Que rico!

Octavio, the cook and part owner has trained in Paris and D.C., and it shows. He is a meticulous and thoughtful artisan who often shops locally for his many organic and sumptuous ingredients. What a treat.
