El Quetzal provides fresh foods harvested from their own organic gardens. Delicious Ecuadorian dishes are also accompanied by American food. There are always vegetarian options available. Fish, chicken, beef and pork dishes, spaghetti, shrimp, ceviche and arroz con camaron are all on the menu. Delicious desserts include brownies, mango cobbler, strawberry shortcake, pineapple cake and chocolate chip cookies. Also, Ecuadorian coffee is roasted on site. Espresso, cappuccino, mochaccino and cafe pasado are all offered. Coffee is available by the pound.

We had such good food here! Big almuerzos del dia are $4.50 and you get an awesome big glass of fresh juice (and they had a really good selection), the best soup, lentil salad, (one day we had a few slices of tomoatoes on the side- best tomatoes we ever had, and another we had an apple slice), rice, and they give you a few selections for fish (one day I had chicken, one day I had salmon). Then they end it with a fabulous dessert brownie, really, the most moist brownie I ever had, with a scoop of ice cream one day - and the next time was two scoops of their homemade ice cream! Anyway, this was the best deal for the quality we found for ourselves in Mindo. We did try Caskaffesu, and the food was good, very good Ceviche there with trout, but more on the pricier side. The only thing that could possibly be bad about Quetzal, is they really do take their time. But I think that is a Mindo thing. We enjoyed it as we are from New York City, and used to waiters pushing us out. We had a lovely two-hour lunch sitting in their beautiful location, enjoying the food and views.
